Wholesome Rice and Wet-Fry Chicken Stew: 30 minutes finger-licking simple recipe for any day of the week dinner

This meal is one of my favorite dinner recipes. It is light yet won't leave you feeling hungry after an hour or two. it is so simple to make and requires only 30 minutes in the kitchen. It also has all the macros that are recommended. It is also one of those meals that can be enjoyed from all across the country since its ingredients are easy to find anywhere. Here's how you can make this mouth-watering simple dinner


Ingredients:

  • 1 cup rice thoroughly rinsed

  • 500g skinless chicken breast chopped into bite-size pieces ( you can use whichever type of chicken meat you have)

  • 1 large onion chopped

  • 2-3 large Romain tomatoes diced

  • 1 medium leek chopped

  • 2 cloves garlic minced

  • salt and pepper

  • cooking oil

  • chicken bouyon cube (optional)

Directions:

  1. Pour one and a half cups of water into a pot. place the pot on a stove and let the water boil on high heat. Once the water has boiled add a teaspoon of cooking oil and a pinch of salt to the water. Add the rice and reduce the heat to a low medium and cover the pot with a lid and let the rice cook till all the water has dissolved. Turn off the stove and leave the rice covered.

  2. Place another pot on the stove on medium heat. Add 2 tbs of cooking oil and let it heat up. Add the chopped onion and leek and saute them till they turn translucent and tender.

  3. Add the minced garlic and let it cook for about a minute.

  4. Add in the chicken and stir it up to ensure that it's all coated with the sauteed onions. Keep stirring till it turns slightly white.

  5. Add the diced tomatoes, salt, and pepper to taste. Crumble the chicken bouyon using your fingers and add it to the pot.

  6. Stir everything up and cover the pot. reduce the heat to a low-medium and let the dish cook for about fifteen to twenty minutes depending on how tender your chicken was.

  7. Remove from the stove and serve while it's still hot

Serve:

On a wide plate serve one cup of the cooked rice. add the chicken stew and greens of your choice and enjoy. this recipe can serve four people.
