Crepes and Fruit Salad Breakfast: Wholesome Breakfast for when you Crave Sweet Stuff

If you got some eggs in the house then this is a must-try breakfast for you. It requires few ingredients to make. It is also one of the ways you can switch up your egg recipes when you get bored of those boiled or fried eggs. Honestly, crepes are one of my favorite egg recipes. they are delicious, light, and cheap to make. Serving the crepes alongside some fruit salad and beverage of choice is a little heaven here on earth for me. A cheat day kind of breakfast that doesn't leave you feeling guilty afterward. Here's how you can make this awesome recipe
Ingredients:
2 eggs
1 cup all-purpose flour
1 tbs sugar
a pinch of salt
butter
1 1/2 cup whole milk
2 bananas
1 cup diced watermelon (substitute with diced mango or pineapple)
1/2 cup grapes (substitute with any type of berries)
directions:
In a large bowl, add the flour, sugar, salt, and mix them well till all the ingredients are incorporated together. Make a well in the middle
In another bowl, add the two eggs and beat them till they mix. Gradually add the milk slowly as you continue whisking
Add the wet ingredients to the well in the dry ingredients bowl gradually as you whisk. Mix until all the ingredients are fully folded and have formed a consistent runny batter.
Turn on the stove and put it on low heat. Place a pan onto the stove and let it heat up. add a slice of butter and let it melt
Scoop 1/4 cup of batter and pour it into the pan and spread it to form a thin wide circular crepe. Cook for 2 minutes, flip it and cook for another 2 minutes. Transfer the crepe to a plate. Repeat the process till all the batter has been cooked
In a large bowl, peel and slice the bananas into coins and toss them in the bowl. Add the watermelon chunks and the grapes into the bowl and fold them using a fork till they mix.
serve:
Roll the crepes and plate them. transfer the fruit salad to a serving bowl. Enjoy this breakfast with some tea or coffee. You can choose to sprinkle some powdered sugar on the crepes.
