Sweet potato twist: upgrading a common sweet potato breakfast to a more healthy wholesome meal!

Tired of eating sweet potatoes? How about trying to changing how we prepare it!
Sweet potatoes are a staple breakfast in most Kenyan households. It is often perceived to be a healthy breakfast option. I don't dispute that statement, but what people fail to understand is that sweet potatoes only contain carbohydrates. I am not a nutritionist but I know we need to make sure we at least try having an a balanced diet. It's so easy to upgrade your typical sweet potato breakfast to a more wholesome breakfast by incorporating some more ingredients in your plate. Here's is a simple inexpensive sweet potato recipe
Healthy, Delicious, Sweet Potato Brunch Bowl
Ingredients:
1 head lettuce
1 large egg
1 apple sliced
¼ avocado sliced
1 TBS lemon juice
1 medium sweet potato
Preparation:
using a folk, make some tiny holes all across your sweet potatoes and either boil it of oven roast it until its tender and cooked all through. once the sweet potato is cooked, let it cool off before peeling it. dice the now cooled sweet potato into bite size pieces
fill a pot with at least one glass of water and put it one a stove to boil. once the water is boiled place your egg and let it cook for 8-10 minutes till it hardens. after 10 minutes, turn off the stove and drain the remaining water. place the egg in cold water for around 2 minutes to cool off. peel the shell of the egg and coarsely chop the egg into big chunks.
Rinse the lettuce head thoroughly to remove all the dirt. using a clean kitchen towel or paper towel dry off the lettuce to get rid of the excess water. once dry, coarsely chop up the lettuce with a knife or tear it up with just your hands.
Serving:
In a large bowl, place your chopped lettuce as the base then top with the diced sweet potatoes, apple slices, avocado slices, and the boiled egg chunks. Sprinkle the lemon juice over the whole bowl. Add salt and pepper to taste.
